Saucisson sec

Decided to test one of the air-dried sausages we made a month or so ago.  I was a bit worried that the casings, made from processed collagen, wouldn’t work, but they seem fine, looking mightily disreputable and tasting rather splendid.

Think I prefer a bit of scraped sub-mucosa around my raw dry flesh though, so it’s wobbly intestines next time.
